The Kosmos opened our doors in January of 2018. When we opened Jerry Miller’s first initiative was to become one of the best burger restaurants in town. Jerry had a vision to make great burgers but needed someone to execute that vision. When Jerry brought on Cheyne Bishop as the Chef, he was trusting him not only with his vision but also allowing Cheyne to become the Chef he is today. As the years passed the menu grew and the Kosmos held a few fine dining dinners every year but that just wasn’t enough to satiate our hunger providing an amazing experience in Albuquerque.

Fast forward to December 31st, 2024 we are restructuring our fine dining events into what we call The Kosmos Collective Dinner Club. This club will feature totally original food and beverage experiences with a Kosmic flare. It is our new vision for our restaurant to only serve the public amazing Gastropub fare by day but also original creative experiences by night.

This Dining club will feature coursed meals with wine and cocktail pairings to follow suit. It is our mission to not only flex our abilities as a restaurant but also allow our staff to show their top-notch capabilities in hospitality. Each event will be unique, not only featuring great food and beverage but also offering an unique experience of art or music that will immerse attendees in the experience.
